90 years of drunken cheese, the birthday of Antonio Carpenedo

 ROME - Antonio Carpenedo, the founder of the Treviso-based company that bears his name, celebrates his 90th birthday. Undoubtedly one of the most influential and charismatic figures in Italian agribusiness, Carpenedo revolutionised the very concept of cheese production by inventing a new way of consuming cheese at the table.

 His great adventure as a cheese refiner began in 1976 with the rediscovery of an ancient tradition widespread in the Piave area; placing cheeses under marc (the remains from the pressed grapes) during the grape harvest.

 It was then that he began the production of the first cheeses aged in wine and marc with the name Ubriaco®, a brand name that was later registered and owned exclusively by the company.

 Thus it was that La Casearia Carpenedo became the first cheese-ageing laboratory recognised in Italy. The UBRIACHI® from La Casearia Carpenedo have since become an institution and an inspiration for the entire sector.

 Six cheeses are included in the UBRIACHI® range: Briscola al Raboso, Baronerosso al Barbera d'Asti, Capo di Stato, Ubriaco al Prosecco DOC, Ubriaco all'Amarone della Valpolicella DOCG, Ubriaco di Raboso.

 In particular among these, Ubriaco al Raboso, BaroneRosso and Barbera d'Asti, along with Ubriaco al Prosecco, respectively won silver and bronze at the World Cheese Award 2022.

 The strong flavours and exciting contrasts make the sensory experience of these cheeses unforgettable.

 Antonio Carpenedo has been honoured by the Guilde Internationale des Fromagers at the Musée du Vin in Paris, on the occasion of the 575th of enthronement, with the title of Maître Honoris Caseus; the association, present in many countries of the world, recognises the professional figure of the master cheese maker, with the noble mission of passing on dairy culture to the final consumer.

 Antonio can still be found, with his usual verve, in the company, now run by his sons Alessandro and Ernesto, although the fourth generation is already active with young grandchildren.
